  • Canola oil (for cooking)

Instructions

  1. Grate the zucchini using a box grater and squeeze out excess moisture using a mesh bag or cheese cloth.
  2. In a mixing bowl, combine the squeezed zucchini, Panko bread crumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper. Mix well.
