  • 810 medium shrimp, peeled & deveined
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • 1 cup corn (fresh or frozen)
  • 1 cup diced pineapple
  • 1 cup diced tomato
  • 2 tbsp diced red onion (optional)
  • 1 tbsp chopped cilantro
  • Juice of lime
  • 1 cup cooked brown rice
  • Extra cilantro for garnish

Instructions

  1. For the shrimp: Toss shrimp with olive oil, smoked paprika, garlic powder, salt, and black pepper. Heat a skillet over medium heat and sear the shrimp for about 2-3 minutes per side until pink and slightly charred.
  2. For the salsa: In a mixing bowl, combine corn, diced pineapple, diced tomato, red onion (optional), chopped cilantro, lime juice, and salt. Mix well.
