Ingredients

Scale
  • 2 bags frozen peaches (20 ounces each)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional but recommended)
  • 1/2 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons corn starch
  • 1 teaspoon cream of tartar
  • 1/2 stick unsalted butter (room temperature)
  • 2 tablespoons water
  • 1 teaspoon fresh lemon juice
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 tablespoon cinnamon (reserve 1/2 for garnishment)
  • 1 stick unsalted butter (cold)
  • 1/4 cup boiling hot water
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar (to dust top of cobbler)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a 9×13 baking dish with non-stick spray. In the dish, combine frozen peaches, granulated sugar, brown sugar, vanilla extract, almond extract, cinnamon, nutmeg, corn starch, cream of tartar, butter, water, and lemon juice. Mix well and cover with foil before baking for 20 minutes.
  3. Meanwhile, in a separate bowl, mix flour, both sugars, baking powder, salt, and half a tablespoon of cinnamon. Cut in cold butter until crumbly. Gradually add hot water until just combined.
  4. After 20 minutes, remove the peach mixture from the oven and spoon dollops of cobbler dough over it. Sprinkle remaining cinnamon and sugar on top.
  5. Bake uncovered for an additional 30-45 minutes until the crust is golden brown.
