  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into cubes)
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 cups beef stock
  • 2 tablespoons masa harina (optional for thickening)
  • Salt and pepper to taste
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2.5 cups water (+ more as needed)
  • 4 cloves garlic (chopped)
  • 2 serrano peppers (chopped – optional for extra heat)

Instructions

  1. Toast dried peppers in a dry pan for 1-2 minutes until fragrant. Remove stems and seeds, then soak in hot water for 20 minutes.
  2. Blend soaked peppers with some soaking water until smooth.
  3. Season the cubed beef with cumin, salt, and pepper.
  4. In a large pot, heat olive oil and sear the beef on all sides for about 6-7 minutes; set aside.
  5. Sauté chopped onions and jalapenos in the same pot until soft, then add garlic.
  6. Return beef to the pot, add chili paste, broth, water, brown sugar, Worcestershire sauce, and masa harina; bring to a boil.
  7. Reduce heat and simmer for about 2 hours until the beef is tender.
