  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • 1/2 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch + 2 tbsp water, for slurry
  • 2 cups broccoli florets
  • Pinch of salt
  • 1 cup jasmine or basmati rice
  • 2 cups water

Instructions

  1. Cook the Rice: Boil 2 cups of water in a pot, add a pinch of salt and stir in the rice. Reduce heat, cover, and simmer until fluffy.
  2. Steam the Broccoli: In another pot with boiling salted water, steam broccoli florets until tender-crisp (about 5 minutes) and set aside.
  3. Cook the Chicken: Heat olive oil in a non-stick skillet over medium heat. Season chicken with salt and pepper; sauté until golden brown.
  4. Make the Sauce: Combine soy sauce, honey, rice vinegar, garlic, ginger in a bowl. Pour over cooked chicken and simmer for 2-3 minutes.
  5. Thicken the Sauce: Mix cornstarch with water to form a slurry; stir into the skillet until the sauce thickens.
  6. Assemble: Serve chicken over rice with steamed broccoli on the side.
