  • 3 pounds pickling cucumbers
  • 1 large sweet onion
  • 2 Tbsp pickling or kosher salt
  • 1 cup apple cider vinegar
  • 2 ½ cups sugar
  • 4 cloves garlic, minced
  • 2 teaspoons dill seed
  • 2 teaspoons mustard seed
  • 2 teaspoons celery seed
  • ½ teaspoon turmeric

Instructions

  1. Prepare the cucumbers by slicing them lengthwise and removing the seeds. Finely dice the cucumbers and onion (using a food processor if desired).
  2. In a non-reactive pot, combine diced cucumbers, onions, and salt. Stir well and let sit for 2 hours.
  3. Drain the mixture in a strainer to remove excess liquid.
  4. In a medium pot, mix vinegar, sugar, garlic, dill seed, mustard seed, celery seed, and turmeric. Bring to a boil.
  5. Add the drained cucumber and onion mixture back into the boiling brine. Boil again briefly.
  6. Reduce heat to medium-low and simmer for about 10 minutes.
  7. Remove from heat and cool completely before transferring to jars.
