  • 3/4 cup sugar
  • 3/4 cup honey
  • 2 tsp vanilla extract
  • 1 tsp bottled lemon juice
  • 1/4 tsp salt

  2. Puree strawberries using a food processor until smooth.
  3. In a deep pot over medium heat, combine strawberry puree with sugar, honey, lemon juice, vanilla extract, and salt. Bring to a boil while stirring frequently.
  4. Reduce heat and simmer until thickened (about 60-90 minutes), stirring often.
  5. Fill hot jars with the mixture, leaving about 1/4 inch headspace; remove air bubbles and seal.
  6. Process jars in boiling water for 10 minutes before cooling.
