  • 1 cup sour cream
  • 1 box white cake mix (15.25 oz)
  • 1 box strawberry-flavored vegan gelatin (3 oz)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 2 ½ cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream (cold)
  • Optional: 3–4 drops red food coloring for a more vibrant pink

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three round cake pans.
  2. In a large bowl, mix the white cake mix with strawberry gelatin powder.
  3. Add eggs, milk, vegetable oil, sour cream, mashed strawberries, and vanilla extract; beat until smooth.
  4. Divide the batter between the pans and bake for 22-28 minutes until a toothpick comes out clean.
  5. Cool cakes in pans for 10 minutes, then transfer to wire racks.
  6. For frosting, beat softened cream cheese and butter until fluffy; gradually add powdered sugar and vanilla extract.
  7. Pour in cold whipping cream and whip until peaks form.
  8. Assemble the cooled layers with frosting in between and cover the entire cake.
