  • 800g strawberry purée
  • 760g sugar
  • 20g pectin
  • 10g tartaric acid
  • 2 tsp Tabasco
  • 50g caster sugar (for coating)

Instructions

  1. In a large pan, mix the strawberry purée with 720g of sugar and bring to a boil.
  2. In a mixing bowl, combine the pectin with 40g of sugar. Once the purée is boiling, add the pectin mixture.
  3. Heat until the mixture reaches 104ºC, then remove from heat and stir in tartaric acid and Tabasco.
  4. Line a baking tray with cling film or nonstick spray. Pour in the jelly mixture and let set in the fridge for at least 4 hours.
  5. Once set, cut into 2cm squares and roll each piece in caster sugar before serving.
