  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • Sea salt flakes
  • ½ cup butter
  • 1½ cups brown sugar
  • 1 cup 35% cream
  • 1 teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F and lightly butter an 11 x 8-inch casserole dish.
  2. Soak chopped dates in hot milk mixed with baking soda for about 15 minutes.
  3. In a bowl, combine flour, baking powder, and salt; set aside.
  4. Blend eggs, dark brown sugar, butter, and vanilla in a food processor until mixed.
  5. Gradually add dry ingredients then incorporate soaked dates until smooth.
  6. Pour batter into the prepared dish and bake for about 30 minutes until set.
  7. While baking, prepare the caramel sauce by melting butter and mixing in brown sugar and cream; simmer until thickened.
  8. Once baked, poke holes in the pudding and pour one-third of the caramel sauce over it to soak.
