  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Parsley flakes for garnish

Instructions

  1. Preheat the oven to 385°F and line a baking sheet with parchment paper.
  2. Wash and carve skull faces into the mini potatoes using a paring knife.
  3. Soak carved potatoes in cold water mixed with 2 tablespoons lemon juice to prevent browning.
  4. In a separate bowl, whisk together olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  5. Drain soaked potatoes and toss them in the seasoning mixture until evenly coated.
  6. Arrange seasoned potatoes face-up on the prepared baking sheet and bake for about 30 minutes or until golden brown and tender.
  7. Garnish with parsley flakes before serving.
