  • 2 tablespoons Madras curry powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon tomato paste
  • 1 cup crushed tomatoes
  • 1 cup beef or lamb broth
  • 1/2 cup full-fat coconut milk

Instructions

  1. Heat oil in a heavy-bottomed pot. Sauté chopped onion until translucent, then add minced garlic and grated ginger for an additional 2-3 minutes.
  2. Stir in the spices: Madras curry powder, turmeric, cayenne pepper (if using), ground cumin, smoked paprika, and ground cinnamon.
  3. Brown the cubed lamb shoulder in the pot until golden on all sides.
  4. Mix in tomato paste and crushed tomatoes; pour in broth and coconut milk, seasoning with salt and pepper to taste.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 1.5 hours until the lamb is tender.
