  • 1 tsp chili powder or cayenne
  • Salt & pepper to taste
  • 1 cucumber, sliced
  • 68 cherry tomatoes, halved
  • 2 tbsp red onion, chopped
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado, sliced
  • 1 tbsp spicy mayo (mayo + sriracha mix)
  • Optional: baby spinach or mixed greens

Instructions

  1. Cook the Chicken: In a bowl, coat chicken cubes with olive oil, paprika, garlic powder, chili powder, salt, and pepper. Heat a frying pan over medium heat and sear the chicken for 5-6 minutes until fully cooked.
  2. Make the Salad: Combine sliced cucumber, halved cherry tomatoes, chopped red onion, mint or parsley, lemon juice, salt, and pepper in a mixing bowl. Toss well and chill.
  3. Assemble the Bowl: Layer cooked rice in a bowl; add greens if using. Top with grilled chicken, avocado slices, cucumber salad, and drizzle with spicy mayo.
