  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste
  • 4 slices cooked turkey bacon
  • 1 ripe avocado, sliced
  • 2 slices pepper jack or cheddar cheese
  • ¼ cup pickled jalapeños
  • 2 brioche buns, toasted
  • ¼ cup mayonnaise
  • 1 tbsp adobo sauce (from canned chipotles in adobo)
  • ½ tsp lime juice

Instructions

  1. Pound chicken breasts to an even thickness and rub with olive oil and spices (smoked paprika, garlic powder, cayenne pepper, salt, and black pepper).
  2. Preheat grill to medium-high heat and cook chicken for 4–5 minutes per side until the internal temperature reaches 165°F (74°C). Melt cheese on top during the last minute of grilling.
  3. Mix mayonnaise, adobo sauce, and lime juice in a small bowl to create chipotle mayo.
  4. Toast brioche buns lightly on the grill or skillet until golden brown.
  5. Assemble the sandwich by spreading chipotle mayo on both sides of each bun and layering with avocado slices, grilled chicken topped with melted cheese, crispy turkey bacon strips, and pickled jalapeños.
