  • 3 pounds Beef chuck roast (sliced thin)

  • 15 ounces Canned light red kidney beans
  • 15 ounces Canned dark red kidney beans
  • 8 ounces Canned tomato sauce
  • 15 ounces Canned fire roasted diced tomatoes
  • 2 cups Beef broth
  • 2 tablespoons Chili powder
  • 1 teaspoon Cumin
  • Salt and black pepper to taste

Instructions

  1. In a large dutch oven, heat the olive oil over medium-high heat. Add the beef and onion; cook until browned. Stir in garlic for an additional minute.
  2. Drain excess fat from the pot and return the meat mixture. Add both types of beans, tomato sauce, diced tomatoes, broth, chili powder, cumin, salt, and pepper; combine thoroughly.
  3. Bring to a simmer then transfer everything into the slow cooker. Cover and cook on low for 4-6 hours.
