  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a Dutch oven, heat olive oil over medium-high heat. Sear beef cubes until browned on all sides; remove and set aside.
  3. In the same pot, sauté onion, garlic, carrots, and celery for about 5-7 minutes until softened.
  4. Return the seared beef to the pot along with diced tomatoes, beef broth, and tomato paste. Mix well.
  5. Stir in dried herbs (rosemary, thyme, oregano) to incorporate flavors.
  6. Cover and bake for approximately 2 hours until the beef is tender.
