  • 1 cup (240ml) buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring (liquid or gel)
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 cup (2 sticks) unsalted butter, softened
  • 12 oz (1 block) cream cheese, softened
  • 56 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • Pinch of salt
  • 12 tablespoons heavy cream (optional for fluffier texture)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans and line bottoms with parchment paper.
  2. In a large bowl, sift together flour, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until smooth.
