  • 3 eggs
  • 1/3 cup oil
  • 1 cup milk
  • 1/2 cup plain yogurt

  • 8 oz cream cheese (cold)
  • 1 cup powdered sugar
  • 1 pint heavy whipping cream (cold)

Instructions

  1. Preheat your oven to 350°F and line cupcake pans with liners.
  2. In a large bowl, sift the red velvet cake mix and combine it with eggs, oil, milk, yogurt, and vanilla extract. Mix until smooth.
  3. Fill each cupcake liner about three-quarters full with batter and bake for 15-20 minutes or until a toothpick comes out clean.
  4. Allow the cupcakes to cool completely.
  5. For the whipped cream topping, beat cold cream cheese and powdered sugar in a stand mixer until smooth. Add vanilla and gradually pour in cold heavy cream until stiff peaks form.
  6. Pipe the whipped cream onto cooled cupcakes and top with fresh blueberries.
