  • 3 cups finely chopped red bell pepper
  • 1 cup finely chopped green bell pepper
  • 1/4 cup finely chopped jalapeño pepper
  • 1 cup apple cider vinegar
  • 5 cups white sugar
  • 1 1/2 packages SURE-JELL powder pectin

Instructions

  1. Sterilize six 8-ounce canning jars and lids according to the manufacturer's instructions.
  2. In a large saucepan over high heat, combine red bell peppers, green bell peppers, jalapeño pepper, apple cider vinegar, and SURE-JELL pectin. Bring to a rolling boil while stirring constantly.
  3. Stir in the sugar quickly and return to a rolling boil for 2-3 minutes. Remove from heat and skim off any foam.
  4. Ladle the hot jelly into prepared jars, filling each to about 1/4 inch from the top. Cover with lids and screw on bands tightly.
  5. Process jars in boiling water for five minutes. Allow them to cool completely before storing.
