  • 2 soft-boiled eggs
  • 1 kiwi, peeled and sliced
  • 1 tomato, sliced
  • 1 cup cauliflower florets, finely chopped
  • 23 tbsp feta cheese, cubed (use plant-based feta if desired)
  • 1 tbsp black olives
  • Fresh parsley
  • Chili flakes (optional)
  • Black sesame seeds (for garnish)
  • Salt & pepper

Instructions

  1. Boil water in a pot and gently add the eggs. Cook for 7 minutes for jammy yolks.
  2. Cool under cold water, peel, and slice the eggs in half.
  3. Slice kiwi and tomato; finely chop cauliflower florets.
  4. On a serving plate, arrange kiwi slices around the edges followed by tomato slices and chopped cauliflower.
  5. Scatter parsley leaves across the plate. Add feta cubes and olives strategically.
  6. Position halved eggs in the center and sprinkle with chili flakes if desired.
  7. Garnish with black sesame seeds and season to taste.
