  • 4 egg whites
  • 2/3 cup cornstarch (or potato starch, tapioca starch, or sweet rice flour)
  • 1 cup vegetable oil (for frying)
  • 1/4 cup Japanese mayo (or regular mayo)
  • 3 tbsp sweetened condensed milk (or condensed coconut milk for dairy-free)
  • 2 tbsp honey
  • 1 tbsp lemon juice (freshly squeezed)
  • 1/2 cup walnut halves
  • 3 tbsp sugar
  • 1 green onion (finely chopped)

Instructions

  1. In a small bowl, mix mayonnaise, sweetened condensed milk, honey, and lemon juice until smooth. Set aside.
  2. In a non-stick pan on medium heat, add sugar and cold water; stir until simmering. Add walnut halves and coat them well. Remove from heat and cool on parchment paper.
  3. In a large bowl, season shrimp with salt and pepper. In another bowl, whisk egg whites until foamy, then mix in cornstarch.
  4. Coat shrimp in the batter and fry them in heated oil until golden brown (2-3 minutes). Drain on a wire rack or paper towel.
