  • 1 egg
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 cup almond flour
  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan mini marshmallows
  • 1/2 cup semi-sweet chocolate chips or chunks

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix the almond butter, brown sugar, pumpkin puree, vanilla extract, and egg until well combined.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt.
  4. Combine wet and dry ingredients until fully mixed, then gently fold in chocolate chips.
  5. Using a cookie scoop, place dough on the baking sheet and add 2-3 marshmallows on top of each scoop.
  6. Bake for 10-12 minutes until golden around the edges. Cool before serving.
