  • 1 medium sweet potato, diced
  • 1 ripe avocado, sliced
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until golden.
  2. In a skillet over medium heat, warm olive oil and add ground beef or turkey. Cook until browned. Stir in tomato paste, cumin, smoked paprika, salt, and pepper; simmer for 2-3 minutes.
  3. In a bowl, layer cooked ground meat first, then roasted sweet potatoes topped with sliced avocado and halved hard-boiled eggs if desired. Garnish with fresh herbs.
