  • 1 can (4 oz) diced green chilies
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp ground cumin (optional)
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • Chopped cilantro (optional)
  • Lime wedges (optional)

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.

  4. Mix in the pinto beans, diced tomatoes with green chilies, diced green chilies, and broth; stir well.
  5. Bring to a boil, then reduce heat and cover to simmer for about 30 minutes to meld flavors.
  6. Taste and adjust seasoning as needed. For thicker soup, mash some beans against the pot's side and stir them in.
