  • 1 large egg

  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup brown sugar
  • Pineapple rings (cut into small pieces)
  • Maraschino cherries (halved)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and granulated sugar in a mixing bowl until light and fluffy.
  3. Add the egg and vanilla extract, mixing until smooth.
  4. In another bowl, whisk together flour, baking powder, and salt; gradually combine with wet ingredients.
  5. For the topping, mix melted butter with brown sugar until smooth; spoon onto lined baking sheet.
  6. Place pineapple pieces on top of the brown sugar mixture, followed by a cherry half.
  7. Scoop and flatten cookie dough over each topping; bake for 12–15 minutes until golden.
  8. Allow cooling before flipping to reveal the beautiful topping.
