  • For Topping: 1/4 cup flour, 3 tablespoons sugar, 1/2 teaspoon baking powder, 1/2 teaspoon cinnamon, and 4 tablespoons cold unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C) and prepare muffin tin by greasing or lining it.
  2. In a mixing bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, mix milk, egg, vegetable oil, and vanilla extract; combine with dry ingredients until just mixed.
  4. Fold in 3/4 cup chopped peaches gently.
  5. For the topping: mix flour, sugar, baking powder, cinnamon; cut in cold butter until crumbly.
  6. Fill muffin tins two-thirds full with batter; top with remaining peaches and crumble mixture.
  7. Bake for approximately 20 minutes or until a toothpick comes out clean.
  8. Allow cooling slightly before serving.
