  • 2 tsp water
  • 1/2 tsp vanilla extract
  • 1 cup salted butter, softened at room temperature
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 and 1/2 tsp vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour, spooned & leveled or weighed out
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup granulated sugar
  • 2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 cup salted butter, melted
  • 1/3 cup light brown sugar, packed
  • 1/2 cup + 1 tbsp all-purpose flour
  • 3/4 tsp cinnamon
  • 1/3 cup powdered sugar
  • 1/4 tsp vanilla extract
  • pinch of cinnamon
  • 12 tbsp milk

Instructions

  1. Make the Peach Filling: In a medium saucepan, combine diced peaches, sugars, lemon juice, cinnamon, and nutmeg. Cook over medium heat until bubbly (about 6 minutes). Mix cornstarch with water and add to the peach mixture. Cook for another minute, remove from heat, stir in vanilla extract, then cool in the fridge.
  2. Prepare Cookie Dough: Cream softened butter with granulated and brown sugars until fluffy. Beat in vanilla and eggs. Gradually mix dry ingredients until dough forms. Chill for 30 minutes.
  3. Assemble Cookies: Scoop chilled dough into balls and place on cookie sheets lined with parchment paper. Bake at 350°F (175°C) for 11-13 minutes until edges are set. Cool slightly before adding peach filling and drizzle with glaze.
  4. Serve warm or store in an airtight container.
