  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a mixing bowl, combine mozzarella, feta, spinach, tomatoes, red onion, and black pepper until well mixed.
  2. Lay one tortilla flat and place one-fourth of the filling on half of it. Fold over to cover the filling.
  3. Heat a skillet over medium heat and add olive oil.
  4. Cook the filled tortilla for about 3-4 minutes per side until golden brown, pressing lightly with a spatula.
  5. Remove from heat and let cool slightly before slicing into wedges.
