  • 2 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 8 oz unsalted butter (cold)
  • 69 tablespoons ice water
  • 2 large honey crisp apples (peeled and diced)
  • 3 tablespoons salted butter
  • 2 tablespoons fruit juice
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup raw or turbinado sugar (for sprinkling)

Instructions

  1. Make the crust by combining flour, sugar, and salt in a stand mixer. Add cold butter until it resembles coarse sand. Gradually mix in ice water until dough forms. Chill for at least one hour.
  2. Prepare the apple filling by cooking diced apples with butter, fruit juice, vanilla, cinnamon, and brown sugar until syrupy. Cool to room temperature.
  3. Roast blackberries with sugar and vanilla until thickened; cool down.
  4. Roll out chilled dough and cut into pumpkin shapes using a cookie cutter.
  5. Assemble hand pies by placing fillings on half of the cutouts, sealing with another cutout on top, crimping edges with a fork. Brush tops with egg wash and sprinkle with raw sugar.
  6. Bake at 375°F for about 25 minutes or until golden.
