  • 3 tablespoons granulated sugar (additional for gummy mixture)
  • 1 tablespoon water (additional for gummy mixture)
  • 2 tablespoons cold water + 1 tablespoon unflavored vegan gelatin (additional for gummy mixture)

Instructions

  1. Bloom the vegan gelatin by mixing it with 2 tablespoons of water and letting it sit for about 5 minutes.
  2. In a saucepan over medium-low heat, combine the fresh fruit juice and granulated sugar until simmering.
  3. Stir in the pectin and bring to a gentle boil while continuously stirring.
  4. Add the bloomed vegan gelatin and mix until fully dissolved.
  5. Cook until slightly thickened, then remove from heat.
  6. Fill candy molds using a syringe or dropper with the gummy mixture.
  7. Chill in the refrigerator for about 2-3 hours until firm.
  8. Dehydrate candies overnight uncovered in the fridge.
  9. Prepare sour coating by mixing granulated sugar and citric acid.
  10. Toss gummies in the sour coating until fully covered.
