  • 4 chicken drumsticks
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • Salt to taste
  • 4 medium potatoes, peeled & cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine chicken drumsticks with olive oil, paprika, oregano, garlic powder, salt, and pepper; toss until well coated.
  3. In another bowl, mix cubed potatoes, sliced carrots, bell pepper, olive oil, paprika, salt, and pepper.
  4. Spread seasoned vegetables in a baking dish and place marinated chicken on top.
  5. Roast for about 50-55 minutes until chicken is golden and cooked through; turn halfway for even cooking.
  6. Garnish with chopped parsley before serving.
