  • cup sweetened shredded coconut (optional)
  • 1 package (8 oz) cream cheese, softened
  • cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp pineapple juice (reserved from the can)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking soda, and salt. Add eggs, vanilla extract, and crushed pineapple with juice; mix until combined. Fold in optional pecans and coconut.
  3. Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  4. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then mix in vanilla extract and reserved pineapple juice until spreadable.
