  • 4 boneless chicken thigh fillets (skin removed)
  • 3 tablespoons olive oil
  • 100 ml lime juice (freshly squeezed)
  • 2 tablespoons cilantro (chopped)
  • 2 cloves garlic (crushed)
  • 1 teaspoon brown sugar
  • 3/4 teaspoon red chili flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 yellow bell pepper (deseeded and sliced)
  • 1/2 red bell pepper (deseeded and sliced)
  • 1/2 onion (sliced)
  • 5 cups Romaine lettuce (or cos lettuce leaves, washed and dried)
  • 2 avocados (sliced)
  • 1 pinch cilantro (extra to garnish)
  • 1 pinch sour cream (optional – to serve)

Instructions

  1. Whisk together olive oil, lime juice, cilantro, garlic, brown sugar, chili flakes, cumin, and salt to create the marinade.
  2. Marinate the chicken thighs for at least two hours in half of the marinade. Reserve the rest for dressing.
  3. Grill marinated chicken on medium-high heat until golden brown (approximately 6-7 minutes per side). Let rest before slicing.
  4. Sauté sliced bell peppers and onions in olive oil until tender.
  5. In a large bowl, combine Romaine lettuce, avocado slices, sautéed vegetables, and grilled chicken strips. Drizzle with reserved marinade before serving.
