  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp lemon juice
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped fresh cilantro
  • 1 cup lettuce or mixed greens (optional)
  • 2 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions

  1. Rub chicken breasts with olive oil, garlic powder, paprika, salt, black pepper, and lemon juice.
  2. Preheat the grill over medium heat; grill chicken for 5–6 minutes per side until cooked through. Let rest before slicing.
  3. Whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper in a separate bowl.
  4. In a large bowl, combine diced avocado, cherry tomatoes, cilantro, and mixed greens if desired. Top with sliced grilled chicken.
