  • 2 chicken breasts, boneless & skinless
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Juice of lemon
  • Salt & pepper to taste
  • 1 small head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • Cucumber, sliced
  • Red onion, thinly sliced
  • 1 cup feta cheese, cubed
  • Fresh dill & mint (optional)
  • 1 cup Greek yogurt
  • Cucumber, grated & squeezed dry
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • Juice of lemon
  • Salt & pepper to taste

Instructions

  1. In a mixing bowl, combine olive oil, minced garlic, dried oregano, lemon juice, salt, and pepper. Add the chicken breasts to the marinade and let them soak up the flavors for about 10 minutes.
  2. Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for about 5-7 minutes per side until fully cooked and golden brown. Remove from heat and let rest before slicing into strips.
  3. In another mixing bowl, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, chopped dill, lemon juice, salt, and pepper. Mix well until smooth. Adjust seasoning if needed.
  4. In serving bowls, layer chopped romaine lettuce at the bottom. Top with halved cherry tomatoes, sliced cucumber, thinly sliced red onion, and cubed feta cheese. Add grilled chicken slices on top along with a generous spoonful of tzatziki. Optionally garnish with fresh dill and mint.
