  • ½ cup unsalted butter
  • 2⅔ cups all-purpose flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon

  • ¼ cup brown sugar
  • ½ cup sour cream
  • 1 large egg
  • Lemon juice (for glaze)

Instructions

  1. Preheat oven to 425°F and prepare a muffin tray with cooking spray.
  2. In a bowl, microwave molasses and butter until melted; allow to cool.
  3. Combine dry ingredients (flour, spices, baking soda) in another bowl.
  4. Mix brown sugar, sour cream, milk, and egg into the cooled molasses mixture.
  5. Gradually combine wet and dry ingredients; stir until just mixed.
  6. Fill muffin cups to the top and sprinkle coarse sugar if desired.
  7. Bake for 5 minutes at high heat; reduce temperature to 350°F and bake for another 11–14 minutes until done.
