  • 3/4 tsp white pepper
  • 1/2 tsp smoked paprika
  • 1 medium egg
  • 1/4 cup cooking oil (for frying)

  1. Peel and grate the potatoes using a box grater or food processor.
  2. Squeeze out excess moisture from the grated potatoes using a kitchen towel.
  3. Grate the onion and remove additional moisture.
  4. In a bowl, combine grated potatoes, onions, flour, salt, white pepper, smoked paprika, and beaten egg; mix until smooth.
  5. Drain most liquid from the mixture but retain the starch at the bottom; mix it back into the batter.
  6. Heat oil in a frying pan and drop about 1/4 cup of batter per pancake; flatten lightly.
  7. Fry each pancake for 3-4 minutes per side until golden brown and crispy.
  8. Drain on a wire rack; season immediately with sea salt before serving hot.
