  • 1 salmon fillet
  • 2 medium potatoes, peeled & diced
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 garlic clove, smashed
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp honey or maple syrup
  • Salt & pepper to taste
  • Pinch of chili flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden.
  2. In a skillet over medium heat, melt butter and add smashed garlic. Season the salmon fillet with paprika, salt, and pepper. Cook skin-side down for 4-5 minutes on each side until fully cooked.
  3. Steam baby carrots for about 5 minutes until tender. In a small pan over low heat, melt butter and stir in honey (and optional chili flakes), then toss the carrots in the glaze.
  4. Steam broccoli florets for about 3-4 minutes until bright green and tender-crisp.
  5. Serve everything together on a plate while hot.
