  • 4 eggs
  • 1 cup diced zucchini
  • 1 cup chopped red bell pepper
  • 1 cup diced onion
  • 2 tbsp crumbled feta or goat cheese
  • 1 tsp olive oil
  • 1 slice whole grain bread
  • ripe avocado
  • Everything bagel seasoning (or salt, pepper, chili flakes)
  • 1 cup sliced strawberries
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium heat. Sauté zucchini, onion, and bell pepper for about 3-4 minutes until softened.
  3. In a bowl, whisk together eggs with salt and pepper. Pour the egg mixture over the sautéed veggies in the skillet and sprinkle crumbled cheese on top.
  4. Bake for 12-15 minutes until set. Let cool slightly before slicing.
  5. Toast your slice of whole grain bread and mash a ripe avocado with salt and pepper; spread it on the toast.
  6. Serve one slice of frittata alongside half of your avocado toast topped with everything seasoning and a side of fresh berries.
