  • 8 large fresh peaches (peeled, pitted, and sliced)
  • 2/3 cup organic brown sugar
  • 2/3 cup organic sugar
  • 1 1/2 cups all-purpose flour
  • 1 stick Earth Balance® butter (cut into small pieces)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup boiling water
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 4 tsp organic sugar

Instructions

  1. Preheat your oven to 425°F.
  2. Prepare peaches by peeling, pitting, and slicing them into wedges. Toss in a bowl with sugars, cinnamon, corn starch, lemon juice, and nutmeg.
  3. Bake peach mixture for about 10 minutes in a greased baking dish.
  4. In a separate bowl, whisk together flour, sugars, baking powder, and salt. Cut in Earth Balance® until crumbly.
  5. Gradually stir in boiling water until combined.
  6. Spoon batter over baked peaches and sprinkle with cinnamon sugar mix.
  7. Bake for approximately 35 minutes until the topping is golden brown.
