  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 1/4 cups buttermilk
  • 2/3 cup vegetable or canola oil
  • 2 squirts of green gel food coloring
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 1/2 cups unsalted butter (for frosting)
  • 1/2 cup full-fat cream cheese
  • 1 Tbsp vanilla extract
  • 1 tsp fine salt
  • 8 cups powdered sugar
  • 2 Tbsp heavy whipping cream

Instructions

  1. 1. Preheat the oven to 350°F (175°C) and grease two round cake pans.
  2. 2. In one bowl, whisk together cake flour, cocoa powder, baking soda, and salt.
  3. 3. In another bowl, cream unsalted butter with granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Then mix in buttermilk, vegetable oil, green food coloring, vanilla extract, and vinegar.
  4. 4. Gradually combine dry ingredients with wet ingredients until just mixed; avoid overmixing.
  5. 5. Pour batter into prepared pans and bake for about 28 minutes or until a toothpick comes out clean. Cool in pans for about 10 minutes before transferring to wire racks to cool completely.
  6. 6. For the frosting, beat unsalted butter until creamy, then add cream cheese and mix well. Gradually incorporate powdered sugar and heavy whipping cream until fluffy.
  7. 7. Assemble the cake by stacking layers with frosting in between; apply a crumb coat and chill briefly before fully frosting and decorating.
