  • 3 1/2 cups granulated sugar
  • 1 large lemon (juiced and halved)

Instructions

  1. Thoroughly wash and trim the strawberries, then chop them into smaller pieces.
  2. In a large pot, combine the strawberries with sugar and the juice from the lemon, including the squeezed lemon halves.
  3. Heat over medium until boiling, stirring to mix well.
  4. Reduce heat and simmer for at least 30 minutes until it reaches a gel-like consistency.
  5. Use a hand blender to puree until smooth as desired.
  6. Test for setting point—aim for 220°F (105°C) or check using the frozen plate method.
  7. Pour hot jam into sterilized jars, sealing tightly and turning upside down to create a vacuum seal.
  8. Allow to cool completely before storing in a cool, dry place.
