  • 1 cup Almond milk, unsweetened + COLD
  • 2 tsps freshly-squeezed lemon juice
  • 6 Tbsps COLD unsalted butter, cut into pieces
  • 1/2 cup unsalted butter (or salted butter, omit salt if used)
  • 1 Tbsp vanilla extract
  • 1 tsp freshly-squeezed lemon juice
  • 1 1/2 cups organic all-purpose flour
  • 2 Tbsps organic cane sugar
  • Pinch of ground cinnamon, optional
  • 1/2 tsp sea salt
  • 1/2 cup unsalted butter, COLD + cubed
  • 1/41/3 cup COLD Almond milk
  • 1 tsp apple cider vinegar
  • 1 large egg, beaten
  • 1 Tbsp Almond milk, unsweetened

Instructions

  1. Preheat oven to 375°F and grease your baking dish.
  2. In a bowl, mix drained peach slices with sugars, cornstarch (mixed with warm water), and salt until coated.
  3. In another bowl, whisk flour, sugar, baking powder, and salt; stir in cold almond milk and lemon juice until just combined. Fold in cold butter until small lumps form.
  4. Pour peach filling into the baking dish and spread the batter over it evenly.
  5. Bake for about 55 minutes or until golden brown. Let cool slightly before serving.
