  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small sliced onion
  • 2 tbsp vegetable oil
  • 2 tbsp regular soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 2 minced garlic cloves
  • 1/4 cup low-sodium chicken stock (or water)
  • 1/2 tbsp cornstarch

Instructions

  1. In a small bowl, mix together the soy sauces, vegetarian stir fry sauce, sesame oil, garlic, chicken stock, and cornstarch; set aside.
  2. Bring a large pan of water to boil over medium-high heat. Blanch the chow mein noodles for about 20–30 seconds until loosened. Strain and set aside without rinsing.
  3. Heat vegetable oil in the same pan; sauté the onions, cabbage, and celery for about 1 minute until softened.
  4. Push vegetables to one side of the pan; add noodles and sauce mixture to the empty space.
  5. Toss everything together until well combined and heated through. Serve immediately.
