  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot coffee
  • 2 cups shredded phyllo dough (kataifi), finely chopped
  • 2 tablespoons butter
  • 1 cup pistachio cream
  • 4 oz milk or semi-sweet chocolate bar
  • ½ cup heavy cream or table cream

Instructions

  1. Preheat your oven to 350°F and grease a baking pan.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add egg, vanilla extract, milk, oil, and mix until smooth. Gradually stir in hot coffee.
  3. Pour batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean. Let cool.
  4. Toast kataifi with butter until golden. Mix with pistachio cream.
  5. For ganache, melt chocolate and heavy cream together in the microwave until smooth.
  6. Once the cake has cooled completely, spread the kataifi filling on top and pour ganache over it.
