  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • β…“ cup mayonnaise
  • β…“ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ΒΌ teaspoon kosher salt

Instructions

  1. In a bowl, mix mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper. Chill.
  2. Boil water in a large pot; cook shrimp for 2-3 minutes until pink.
  3. Prepare an ice water bath; transfer shrimp to cool for 3 minutes then drain and chop.
  4. In a mixing bowl, combine chopped shrimp, cucumber, green onion, and the chilled dressing. Stir until creamy.
