  • 12 oz rigatoni pasta
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup Velveeta cheese, cubed
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt & black pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Cook the rigatoni in salted boiling water until al dente, about 10-12 minutes. Reserve 1 cup of pasta water before draining.
  2. In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun seasoning and cook until golden brown, about 6-8 minutes. Set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant.
  4. Stir in heavy cream and milk, then add cream cheese until smooth.
  5. Incorporate Parmesan, mozzarella, and Velveeta cheese; mix until melted.
  6. Toss cooked rigatoni in the sauce and add chicken back into the skillet.
  7. Garnish with parsley before serving.
