  • 2 tablespoons butter
  • 3 cloves garlic
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon fresh ground black pepper
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 425°F.
  2. Butter a baking dish and set aside.
  3. Slice zucchini into ¼-inch rounds, sprinkle with salt, and let rest for 15 minutes.
  4. Pat the zucchini dry to remove excess moisture.
  5. Arrange the zucchini slices in the prepared baking dish.
  6. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the Parmesan cheese.
  7. Melt butter in a saucepan over medium heat; add minced garlic and cook until fragrant.
  8. Combine the cream mixture with the garlic in the saucepan and let bubble gently.
  9. Stir in half of the mozzarella cheese until melted.
  10. Pour the sauce over the zucchini and sprinkle with remaining cheeses.
  11. Bake for 18-22 minutes until golden brown.
  12. Let cool for 5-10 minutes before serving.
