  • 1 can (14 oz) full-fat coconut milk
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 tablespoon vegetable oil
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add cubed beef and sear until browned on all sides. Remove from pot.
  2. In the same pot, sauté chopped onion, minced garlic, and grated ginger until onions are translucent. Stir in curry powder, cumin, turmeric, and cayenne (if using) for another minute.
  3. Return the beef to the pot. Add coconut milk, chickpeas, beef broth, tomato paste, salt, and pepper. Stir to combine and bring to a gentle simmer.
  4. Cover and simmer on low heat for about 30 minutes, stirring occasionally.
  5. Meanwhile, prepare garlic naan by mixing flour, yogurt, warm water, sugar, and baking powder into a dough. Roll out and cook on a hot skillet until golden brown on both sides.
  6. Serve the curry garnished with fresh cilantro alongside warm garlic naan.
