  • 1 lb boneless chicken breast or thighs, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 4 garlic cloves, minced
  • 3 cups baby spinach, packed
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne or fusilli pasta
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces, seasoning with salt and pepper. Cook until browned (5-7 minutes).
